Description
Roasted Rosemary Lamb Rack (1.2kg) with Tracklements Mint Jelly OR Mint Sauce + Small Cooler Bag.
Chef’s Preparation Notes:
- Preheat the oven to 180°C.
- Remove the lamb from the bag and let it come to room temperature.
- Place the lamb on an ovenproof rack over a tray and roast for 15 to 20 minutes. If using a temperature probe, cook until the internal temperature reaches 55°C.
- Remove the lamb from the oven and let it rest for 10 minutes before carving.
- Serve with the accompanying mint jelly or mint sauce.
