The Taggiasca olive, produced exclusively in Western Liguria, is famous throughout the world for its extraordinary quality. It has a brown and greenish color, a delicately bitter taste and firm pulp.
The Ardoino family of Liguria have been making olive oil from a combination of the prized Taggiasche olive and other locally grown varieties since the 1870s.
